Affogato is Italian for 'drowned', and that is exactly what happens here: a scoop of vanilla ice cream slowly drowns in a hot shot of ceremonial matcha. While the classic affogato uses espresso, the matcha version provides a softer, umami-rich bitterness that complements the ice cream in a completely different way.

This recipe was developed entirely originally for Unmatched Matcha. The secret lies in the quality of the matcha: only ceremonial grade from Kagoshima has enough depth of flavor to stand out alongside the ice cream. Culinary grade disappears into the sweetness. Always use Unmatched Matcha ceremonial powder for the best result.

Ingredients

For the matcha shot

  • 2 grams Unmatched Matcha ceremonial powder (1 level teaspoon)

  • 60 ml warm water (75-80 degrees)

For the affogato

  • 1 large scoop (or 2 small scoops) of vanilla ice cream or vanilla gelato

  • Optional: a splash of oat milk for extra creaminess

  • Optional: a pinch of fleur de sel for contrast

  • Optional: chopped pistachios or grated dark chocolate as garnish

Preparation

1. Prepare the ice cream. Scoop 1 large ball of vanilla ice cream into a small, deep bowl or a tall glass. Place it back in the freezer briefly while you prepare the matcha so that the ice cream stays firm during serving.

Pro tip: Use a chilled glass or bowl for the best result. 5 minutes in the freezer is sufficient.

2. Whisk the matcha. Put 2 grams of Unmatched Matcha in a small bowl. Add 60 ml of warm water (75-80 degrees, not boiling) and whisk vigorously with a chasen or electric whisk into a smooth, frothy shot without lumps.

Pro tip: A double dose of matcha (4 grams per 60 ml) provides an extra intense shot that stands out better alongside the sweet ice cream.

3. Pour immediately over the ice cream. Take the glass out of the freezer and slowly pour the hot matcha shot over the scoop of ice cream. The ice cream will begin to melt immediately. Serve immediately.

4. Garnish to taste. Add a pinch of fleur de sel, chopped pistachios, or grated dark chocolate if desired. Eat it while it melts: the combination of hot and cold is the core of the recipe.

Pro tip: Eat the affogato with a spoon and a straw at the same time: the spoon for the ice cream, the straw for the liquid matcha that collects at the bottom.

The Result

A spectacular dessert that makes an impression with minimal effort. The hot matcha slowly melts the ice cream and creates a hot-cold flavor experience: the umami-rich bitterness of the matcha, the sweet creaminess of the ice cream, and the ice-cold temperature that makes every sip different. As you eat, the flavors mix into a matcha-vanilla sorbet that fills the bottom of the glass.

3 Variations to Try

1. Matcha Affogato with Coconut Milk Ice Cream

Replace the vanilla ice cream with coconut cream ice cream for a completely plant-based version. Coconut and matcha are a classic combination: the fattiness of coconut tempers the bitterness of matcha in just the right way. Sprinkle with toasted shredded coconut for extra texture.

2. Double Matcha Affogato

Use 4 grams of matcha per 60 ml of water for an extra intense, dark green shot. This provides a more powerful flavor that stands out better with sweeter or richer ice cream like stracciatella or caramel. Something for the true matcha lover.

3. Matcha Affogato with Seasonal Fruit

Add a few fresh strawberries or raspberries next to the ice cream for a fresh counterpart. The fruit cuts through the umami of matcha and the sweetness of the ice cream. Surprisingly fresh and light.

Tips for the Perfect Result

  • Always use ceremonial grade matcha: culinary grade is too bitter and has too little depth of flavor alongside sweet ice cream

  • Water at 75-80 degrees: too hot makes the matcha bitter, too cold provides a less intense shot

  • Serve immediately: the affogato is best in the first 2 minutes, while the ice cream is still partly firm

  • A chilled glass ensures the ice cream melts less quickly while serving

  • Gelato works better than regular ice cream: less air, richer flavor, melts more slowly

Why Do Matcha and Vanilla Ice Cream Work So Well Together?

The combination seems simple, but there is an interesting flavor chemistry behind it. Vanilla contains vanillin, an aromatic compound that enhances sweetness and creaminess. Matcha contains L-theanine, which provides an umami taste that contrasts with the sweetness of vanilla. Contrast is the core of all good flavor combinations: sweet-salty, fat-acid, hot-cold.

The temperature change is just as important as the flavor. Hot and cold at the same time activate different receptors in the mouth. That is exactly why affogato in all its variations is so satisfying: it plays with two dimensions at once, temperature and taste.

Frequently Asked Questions

Which ice cream fits best with matcha affogato?

Vanilla gelato is the classic choice and works best. The neutral sweetness allows the matcha flavor to come through well. Coconut ice cream, stracciatella, and caramel also work well. Avoid fruit flavors: they clash with the umami of matcha.

Can I make the matcha affogato ahead of time?

No, this is a dessert that is eaten immediately after preparation. The combination of hot and cold is the signature of the recipe. You can prepare the matcha shot ahead of time and keep it warm in a thermos for a maximum of 30 minutes.

Is matcha affogato suitable as breakfast?

Technically yes: matcha gives energy, ice cream gives calories. But most people eat it as a dessert or afternoon snack. The caffeine (60-80 mg) is comparable to an espresso, so it is better not to have it after 4:00 PM if you are going to sleep early.

How much caffeine does matcha affogato contain?

A standard portion with 2 grams of matcha contains 60-80 mg of caffeine. That is comparable to an espresso. The L-theanine in matcha buffers the caffeine absorption, which means you experience the energy more gradually than with coffee.
