Mango matcha latte: The tropical summer recipe

Reading time: ±4 minutes | Last updated: May 2026

Two layers, two colors, one drink. The mango matcha latte is the recipe that looks impossibly beautiful but is surprisingly easy. Golden mango puree at the bottom, bright green matcha latte on top, separated by a layer of ice cubes. It tastes tropical, fresh, and creamy all at once.

We make this recipe with ceremonial Unmatched Matcha from Kagoshima. The gentle umami of ceremonial matcha combines surprisingly well with the sweet, tropical flavor of fresh mango. No sugar needed: the mango provides all the sweetness you need.

Ingredients

For the mango layer:

• 1 ripe mango (peeled, cut into pieces)

• Alternative: 100 ml mango puree from the freezer or a jar

For the matcha latte layer:

• 2 grams of ceremonial Unmatched Matcha (approx. 1 teaspoon)

• 30 to 40 ml warm water (70 to 80 °C)

• 150 ml cold milk of your choice (oat milk, almond milk, or coconut milk)

For the glass:

• A generous handful of ice cubes

• Optional: pinch of matcha powder as a topping

Preparation: step by step

Step 1: Make the mango puree

1. Peel the mango and cut the flesh into pieces.

2. Blend the pieces in a blender until you have a smooth, thick puree. No blender? Mash the mango with a fork into as smooth a mass as possible.

3. Set the puree aside for a moment.

Pro tip: Always use a ripe mango. A ripe mango gives slightly when you press it gently and smells sweet near the stem. Unripe mango is more acidic and less sweet, which disrupts the balance with the matcha. In the Netherlands, mangoes are at their sweetest from May to September.

Step 2: Make the matcha shot

1. Sift 2 grams of Unmatched Matcha into a wide bowl or shot glass.

2. Add 30 to 40 ml of warm water (70 to 80 °C, never boiling).

3. Whisk with a chasen, milk frother, or fork until you have a smooth, frothy paste.

4. Let the matcha shot cool for 1 to 2 minutes.

Pro tip: Letting the matcha shot cool down slightly prevents the ice from melting too quickly and the layers from running into each other.

Step 3: Build the layers

1. Pour the mango puree into a tall glass (approx. 350 to 400 ml) until the glass is filled about one-quarter of the way. This is the golden bottom layer.

2. Carefully add a generous handful of ice cubes on top of the mango.

3. Slowly pour the cold milk over the ice. The milk will settle between the ice cubes and form the white middle layer.

4. Mix the cooled matcha shot with the remaining cold milk and slowly pour this as the final layer on top.

5. Optional: sprinkle a pinch of matcha powder over the top layer for a green accent.

Pro tip: Pour each layer slowly over the back of a spoon. This keeps the layers separated and gives you the perfect three-layer effect: gold on the bottom, white in the middle, green on top.

The result: gold, white, and green

If everything goes right, you now have a glass with three beautiful layers. The golden mango puree at the bottom, the cold white milk in the middle, and the bright green matcha latte on top. It’s a drink that looks like it came from an Instagram café, but that you made at home in 5 minutes.

Stir everything together before drinking. The flavors mingle into a tropical, creamy, refreshing whole. The sweetness of the mango, the umami of the matcha, and the creaminess of the milk complement each other perfectly. No sugar needed, no syrup, no additives.

The calories come largely from the natural sugars in the mango. There is zero grams of added sugar. With almond milk, you are on the low side (approx. 150 kcal), with oat milk in the middle (approx. 180 kcal), and with whole milk higher (approx. 220 kcal).

3 variations on the mango matcha latte

Mango coconut matcha latte. Replace the regular milk with coconut milk (carton) and add a splash of coconut water to the mango layer. The result: extra tropical, as if you’re sitting on a Thai beach.

Warm mango matcha latte. Warm the milk and mix it with the matcha shot. Serve the mango puree separately in a small dish on the side, like a compote that you stir through the warm latte. Perfect for cooler evenings.

Mango matcha smoothie. Blend everything together: mango, matcha shot, milk, and a few ice cubes. You lose the layered effect but get a thick, creamy smoothie that is perfect as a breakfast-on-the-go.

Tips for the perfect result

Use ceremonial matcha. In this recipe without added sugar, you will taste the quality of the matcha immediately. Culinary grade matcha tastes bitter here next to the sweet mango. Ceremonial Unmatched Matcha provides the gentle, full flavor that complements the mango.

Fresh mango is best. Fresh, ripe mango gives the most beautiful orange color, the most sweetness, and the best texture. Frozen mango also works but is often slightly more acidic and paler. Let frozen mango thaw completely before blending.

Lots of ice. The ice cubes are crucial: they keep the layers separated and the drink cold. Fill your glass at least one-third with ice after adding the mango layer.

Drink it immediately. After 10 to 15 minutes, the layers will begin to mix. The taste remains good, but the visual effect disappears. Take a photo and then enjoy.

Why mango and matcha go so well together

Quick answer: Mango provides tropical sweetness and fruitiness that balances the umami of matcha. The combination of sweet, savory, and fresh creates a complete flavor profile without needing to add sugar.

The combination of mango and matcha works for the same reason as mango and sticky rice in Thai cuisine, or mango and chili in Mexican: sweet and savory enhance each other. The umami of matcha (savory, full) is softened by the sweetness of the mango, while the mango, in turn, gains depth from the matcha.

There is also a nutritional synergy. The vitamin C in mango (approx. 75 mg per serving, 80% of the recommended daily amount) improves the absorption of the catechins in matcha. Vitamin C stabilizes EGCG in the stomach, allowing more to enter your bloodstream (Green et al., Molecular Nutrition and Food Research, 2007). So, you not only get a tastier drink but also get more out of the active compounds in the matcha.
